Clare Wine Co Watervale Riesling 2017
This Riesling was harvested on the 2nd of march at 2.45am, with a starting Baume of 10.3, its was given a 1 hour 20 cold soak, then bag press and left to settle overnight letting just the heavy solids settle before starting the ferment. Fermentation took 12 days. After the ferment was finished the wine was racked S02 added and kept cold at 0 before bottling on the 24th of May.

Fresh limes with hints of stone fruit notes such as nectarine
Quite rich for a younger wine. Nice citrus flavours, lychees, hints of clove on the palate with a bit of sugar, Just to take the sting out of the acid. Mouth filling, well-structured palate
A very easy drinking style of wine. An excellent drinks in its youth or will cellar for the next 5 -8 years. Serve well chilled.
